Your New Favorite Soup

I love soup. I seriously could eat soup every single day. As long as it doesn’t have seafood in it, I’ll eat it. For me, the more vegetables, the better! And now that Alabama is finally feeling like fall, I knew I had to share this recipe with you! 🙂

I came across this recipe on Pinterest a couple of years ago and it quickly became a new favorite. I often make it on a Monday and eat if for lunch all week long.

Confession: I never bought or tasted a sweet potato until I made this recipe. I LOVE sweet potatoes now! I will peel, dice and roast 3-4 at a time and eat them for breakfast with my eggs and avocados. So good! 🙂

Back to the recipe, though. I have given it to friends and family and they love it! It’s a great recipe to make for a new mom or a sick friend because it’s healthy, easy and filling. Did I mention it’s a crock pot recipe? Even better! 😉 My only change is that I don’t add meat. You could add ground pork or ground turkey, but I usually forget and don’t have any meat thawed. It’s still yummy without it!

Sometimes I add kale instead of spinach, or I don’t add any greens at all. Although, adding greens to your soup is an easy and tolerable way to eat them if you struggle with that sort thing. 😉 I hope you enjoy it as much as I do! 🙂
