A New Christmas Tradition

I love Christmas. But who doesn’t, right?

The traditions. The food. The music. The movies. The food. ๐Ÿ™‚

There are a lot of things that make Christmas special and unique for each person and their family. Our family traditions include baking and decorating cut-out cookies or Christmas Cookies as we call them, a $5 gift exchange on Christmas Eve and eating my dad’s breakfast casserole on Christmas Day while we open gifts.

Now that I am married and living away from family, we have made new traditions. ๐Ÿ™‚ We make cinnamon rolls Christmas morning and pray before we open our gifts, giving thanks to God for the ultimate gift, His son, Jesus Christ.

Nothing fancy. Nothing too tasking. Just like this recipe I’m about to share!

I came across this recipe several years ago…you guessed it…on Pinterest. Don’t the greatest stories start with Pinterest? ๐Ÿ™‚ The name immediately caught my attention: Amish Baked Oatmeal. It immediately gave me cozy vibes, so I knew I had to try it.

It’s not fancy, but it tastes fancy. And the best part about this recipe is that it’s great plain, but you can add whatever you want on top. So, you mix together traditional oatmeal ingredients and bake it. Then, you scoop the oatmeal into bowls and top it with almond milk, cinnamon, brown sugar, strawberries, blueberries and the list goes on! I think it would be so fun to make a big batch of this and have all kinds of fresh fruits and toppings in little bowls for your guests to choose from. Fancy.

It’s funny because I’m not really a sweet breakfast kind of girl. I’d rather have eggs, bacon and potatoes, but it’s nice to switch it up. I have made a batch of this for breakfast and then just scooped out a little every morning. It’s really good reheated in the microwave. Win. I hope you enjoy this as much as I do!

Amish Baked Oatmeal
Gooseberry Patchย Best-Ever Casseroles Cookbook
1/2 cup milk
1/2 teaspoon salt
1 teaspoon baking powder
1/4 cup sugar
1 egg
1/4 cup butter, softened
1 teaspoon vanilla extract
2 tablespoons oil
1 3/4 cups quick-cooking oats
In a mixing bowl, beat the egg. Add the rest of the ingredients, except the oats, and mix thoroughly until well combined. Add the oats and stir. Pour into a greased 13×9 baking dish. Bake at 350 for 25 to 35 minutes. Oatmeal is done when the liquid is gone and the oatmeal is a light golden brown color. Serves 5 medium to small portions. A decent size breakfast with fruit on top.

    I do not like oatmeal, but I am tempted to give this a try ๐Ÿ˜‰

      Do it!! I think you would like it! I have never been a fan of oatmeal…I just can’t get the right texture for me to enjoy it! I like this because the oats stay in their shape and they are soft and dry. ๐Ÿ™‚
